AMAZING

So, I got home from work today and Matt was in a pretty bad mood.  In addition to all of the homework and reading he has for grad school, the unit he's deploying with is making him learn the first level of Arabic on Rosetta Stone.  Now, NO language is easy to learn quickly, and I'm pretty sure that Arabic is probably one of the most difficult.  

I called and woke him up early this morning after my car battery died on my way to work (blah)...and then apparently he sat and did Arabic all day long.  By the time I got home, he felt as though he had learned nothing...and also, he had about a gazillion other things to do today.

SO.  He went off to class tonight, and I decided that he would be much happier if he came home to cookies tonight.  I had some leftover pumpkin puree, so I decided to make pumpkin chocolate chip cookies.  I searched for the recipe online, and wrote it down on a piece of paper.  And now I have no idea what website it came from...does it sound familiar?  If so, let me know where it came from so that I can give it proper credit!

Without further ado...
Pumpkin Chocolate Chip Cookies

Ingredients:
1 cup pumpkin puree
1 cup white sugar
1/2 cup vegetable oil
1 egg
2 cups all-purpose flour (I used whole wheat flour because I'm out of white flour)
2 teaspoons baking powder
2 teaspoons ground cinnamon
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon milk
1 teaspoon vanilla extract
2 cups chocolate chips

Preheat oven to 350 degrees.

Combine pumpkin, sugar, vegetable oil, and egg.  In a separate bowl, stir together flour, baking powder, cinnamon, and salt.  Dissolve the baking soda in the milk and add (ummm...I didn't have any baking soda so I just threw in the milk alone).  

Stir the flour mixture to the pumpkin mixture and mix well.  Add vanilla and chocolate chips.

Bake for around 10 minutes.

Note from the chef (that's me!):  I just realized that I forgot to add the vanilla.  Oops.  And mine had to bake for way longer than 10 minutes...more like 15.  

Oh, and just so you know, I did sample one small cookie, and it tastes FANTASTIC even without the vanilla and baking soda!

Matt is due home any minute now...let's hope that these cookies cheer him up!

Good job on the cookies! Hopefully they will cheer him up but learning arabic would probably have me in a bad mood too.

aww - what a good wifey you are. i'm sure he'll love them.

what if you learned arabic with him? would tha tmake it more fun? you guys could quiz each other! :) then you'd both know another language most people would not know when you wanted to talk about people with them in the room.

Wow, that's us. What happens if he doesn't learn it? I'm thinking that anyone who tries to learn Arabic doesn't pick it up right away. Good luck to him!

Good thing he's got a wonderful wife to bake him cookies when he's having a bad day! Be sure to tell us what he thought!

I've never had pumpkin cookies! It actually sounds quite good!

Wow. Those sound amazing. I'm sure Matt will be thrilled. I have been dying to make some pumpkin goodies lately. Question - do you use canned pumpkin or fresh?

That is such a hard language to learn. I'm using the same program right now for work and it's REALLY hard! They just say the words and you have to match it to what you think it means. It's rough!

I hope he likes the cookies!

I have been wanting to try a cookie with pumpkin in it!

Sometimes, my husband will have fresh cookies for me when I come home, and it makes ANY bad feelings go away! :) I hope it worked!

YUM! You should definitely try the Pumpkin Chocolate Chip bread that Vineyard Vogue posted about last year. It's incredible! It also freezes really well, so you can make a few batches all at once and then dole them out over time.

Ummmmm.....arabic? Yuck.

How did it go?? I love making cookies and sweets when I know someone's having a rough time. It's so easy to make and so yummy!

Do you often bake with whole wheat flour? I have started to only buy whole wheat flour and find there something disheartening about it. The stuff comes out good but it's not like white flour. It's almost like it has an earthy taste to it?

haha you are too funny! I am totally going to try those cookies (although I think I will include baking soda and vanilla..) I can't imagin how hard it would be to learn Arabic! You are a wonderful wife :)
